Juicy Briskets with a Crunchy Bark using Mighty Dream’s Pink Butcher Paper.Cook time: 14 Hours
Servings: 4 to 5 (expand this to meet your guest numbers)
Trimmed Brisket [approx. 2 to 3 Pounds]
Onion powder 2 Tbsp.
Garlic powder 2 Tbsp.
Oregano 1 tbsp.
Cumin Powder 1 tsp
Chili powder 1 tsp
Coarse salt and pepper to taste
Brisket is an ideal meat for slow cooking. Cooking a perfect smoky brisket is more of a technique than ingredients. Using a pink butcher paper helps us to get a perfectly cooked tender and juicy Brisket with a crispy crust.
Step 1 – Selecting a Brisket
Brisket is a hard meat. Preferably buy a trimmed Brisket from the store. You can also refrigerate the brisket a day before and scrape off the excess fat layers. Ideally ¼” thick fat is enough to maintain the moisture of the meat.
Step 2 – Prep the Brisket
Let the meat come to room temperature. Pat dry the meat in a paper towel to remove any excess water moisture.
Step 3 – Seasoning
Mix all the above-mentioned spices in a blender and spread it generously on to the brisket. Rest the brisket fat side up & keep it in room temperature for an hour for marination.
Step 4 – Smoking
Preheat the smoker to 225° to 250° F. Place the Brisket fat side up directly on to the smoker rack and close the lid. Keep smoking at a steady temperature. Flip and rotate as required. Slow and steady temperature and smoke tenderizes the meat and seals the flavors. Using a temperature gauge in the grill or a barbecue digital thermometer check the internal temperature of the Brisket. Once the internal temperature reaches 170° - 180° F, It hits the plateau. After 4 to 5 hours of cooking the water starts to accumulate at the top due to internal water evaporation of meat which is called stall. The meat stops cooking until complete evaporation of this water. Stall may take 4 to 5 hours. Ideally, it takes 10 to 12 hours of slow cooking of unwrapped brisket on the smoker at this stage. But you can power through the stall with Pink Butcher Paper.
Step 5 – Wrapping with Mighty Dream’s Pink Butcher Paper
Once the Top of the brisket starts to dry up remove the brisket from the smoker. Wrap it with the Pink Butcher Paper. Let the wrapped Brisket cook for 3 to 4 hours braising in its own juices, giving the smoky flavor to the meat. Allow the Brisket to rest for 2 to 3 hours.
Step 6 – Cut and Serve.
Cut your crispy crust juicy brisket into ¼” slices and serve it with your favorite salads.
